White Chocolate & Lime Coconut Macaroons

Need a mid-afternoon snack? These macaroons are sure to hit the spot! These little morsels of heaven are naturally grain-free and gluten-free. The white chocolate topping provides these cookies with a sweet richness while the touch of lime helps to balance the flavour. They’re also super easy to make!
Ingredients:
2 large egg whites (~1/4 cup)
1/3 cup granulated sugar
1 tsp vanilla extract
Zest of one lime
2 tsp lime juice
2 ¼ cups unsweetened shredded coconut
4 oz white chocolate
Directions:
Preheat oven to 325 degrees F. Prepare a baking sheet with parchment paper or a silicone baking mat.
Using a hand mixer or stand mixer with the whisk attachement, beat egg whites, sugar, and vanilla extract until thick and frothy.
Add the lime juice and zest and mix together. Add shredded coconut and mix gently until combined.
Using wet hands, form 1-1 ½ inch balls of the cookie mixture and place them on the prepared baking sheet.
Bake until lightly golden brown at the edges, approximately 20 minutes.
Cool for 5-10 minutes before moving to a wire rack to cool completely.
When the macaroons are cool enough to handle easily, melt the white chocolate using a double boiler on the stovetop or by using the microwave. If using the microwave, place chocolate in a medium microwave-safe bowl and microwave in 10 second intervals, mixing between each interval until completely melted and smooth. Drizzle over the macaroons and cool at room temperature or in the fridge until chocolate has set.
