Peanut Butter Swirled Brownies

Fudgey or cakey? This is the age-old question when it comes to brownies. Which is your favourite? For me, fudgey brownies are the absolute best. At least once a month, I get a craving for some deliciously gooey chocolate morsels. These brownies are the perfect way to satisfy any chocolate craving. Not only are these brownies wonderfully fudgey, this recipe takes things up a notch by swirling in peanut butter. Enjoy these brownies with a cold glass of almond milk.





Peanut Butter Swirled Brownies:


Ingredients:

  • 6 oz semi-sweet baking chocolate

  • 1 cup (8 oz butter)

  • ¾ cup sugar

  • 1 tsp vanilla extract

  • 4 eggs

  • ½ cup gluten-free all purpose flour

  • ½ tsp salt

  • 1 tsp baking powder

  • ½ cup peanut butter

  • 3-6 peanut butter cups (optional)


Directions:

  1. Preheat the oven to 350 degrees F. Line a 9’ by 9’ baking sheet with parchment paper.

  2. Place chocolate and butter in a glass or metal bowl. Place the bowl on top of a saucepan of boiling water to create a double-boiler. Stir occasionally until butter and chocolate have melted completely.

  3. Remove the bowl containing the melted chocolate and butter from the double-boiler. Mix in sugar and vanilla extract, mix to combine, and set aside to cool.

  4. Mix together GF flour, salt, and baking powder in a separate bowl.

  5. Once the mixture has cooled to room temperature, add one egg at a time, mixing with each addition.

  6. Add the dry ingredients to the wet ingredients in two additions and mix well.

  7. Pour the batter into the prepared pan. Drop spoonfuls of peanut butter throughout the batter and use a knife to swirl the peanut butter throughout the mixture.

  8. Place the batter in the oven and bake for 30-35 minutes. If desired, chop up peanut butter cups sprinkle over the top of the brownies after 20 minutes of cook time.
